Kakinoha-zushi is the most representative gastronomic speciality of Nara and a delicious way to connect with the region's culinary history. It consists of bites of vinegared rice with a slice of cured mackerel or salmon, wrapped in persimmon (kaki) leaves. The leaf is not eaten, but it provides natural antibacterial properties that allowed the sushi to be preserved for days at a time when fresh fish reached Nara from the coast after several days of travel. The result is a mild, slightly smoky flavour with a texture different from conventional sushi. The presentation in a lacquered wooden box is elegant and very photogenic. You can find it in multiple restaurants in the centre of Nara, especially in Naramachi, and also in takeaway shops near the station. Prices range between 800 and 1.200 ¥ for a portion of 5 to 8 pieces. The landmark restaurants include Hiraso and Tanaka Kakinoha Sushi, both in the historic centre. It is also sold as a souvenir to take home, packed in decorative boxes available at Nara station. Try it accompanied by green tea to better appreciate the nuances of the marinated fish.
